Every region in Italy is proud of its cuisine, and Salento is no exception. The real joy for us personally is the quality of local, seasonal ingredients including artichokes, tomatoes, figs, pulses, citrus fruits, seafood, wine and, of course, olive oil (Puglia produces about 12.5% of the worldwide olive oil output)

For a really authentic and delicious gastronomic experience, we recommend L’Antica Dispensa in Cutrofiano, where Cristina will feed you like royalty. A word of warning: go easy on the pasta or you’ll never make the main courses.
